Veggie Burgers

This is the vegan burger recipe from Timothy Sheiff.  Tim is one of my current obsessions, I've been watching loads of his YouTube parkour videos since I heard him on the Rich Roll podcast! Amazing guy with incredible athletic skill, plus he's plant based so of course I'm a fan. You can also find this recipe on Jamie Oliver's YouTube channel.

1 baked kumara (sweet potato)
1 can of mixed beans
Juice and zest of 1 lime
2 tablespoons chickpea flour
1 bunch of coriander
1 teaspoon Japanese chilli, or 1 chopped fresh red chilli (deseeded if you don't want it too spicy)
Pulse altogether in food processor. Form into 4 patties using extra chickpea flour and grill or fry for 2-3 min on each side.

I used gluten free buns, cos (romaine) lettuce, cucumber, tomato, red onion, fresh pineapple slices, ketchup and avocado.
