I love sauerkraut, and it is one of the things my naturopath recommended I eat on a daily basis to help the healing process. Because sauerkraut is fermented it is a natural probiotic. It increases the healthy flora in the intestinal tract which aids digestion and helps the immune system fight infection.
1/2 red cabbage
1 organic red apple
Small piece of fresh ginger
1 teaspoon fine Himalayan salt
Put cabbage, apple and ginger through food processor on fine shred blade (or if you don't have a food processor slice the cabbage very fine then grate the apple and ginger).
Put all into a large bowl and sprinkle with the salt. Massage for at least 10 minutes - there should be a lot of liquid appearing and the cabbage should be getting very soft.
Put into jars, pushing cabbage down so there is liquid at the top. You may need to weight it with a small jar or some other object to keep it down. Sit jars on a plate or towel on warm bench for about a week (check every couple of days to make sure it doesn't overflow) then refrigerate.
