These vegan flax crackers are so easy to make. 2 minutes in the food processor then into the oven for a few minutes and voila, you have fresh wholesome gluten free crackers, without all the crap you find in the supermarket ones! You can also dehydrate them for a raw version, I don't yet own a dehydrator as I currently have a teeny tiny kitchen. You can also put them in the oven at the lowest temperature for a few hours. My 2 year old was just desperately wanting to eat these so we just made them as quickly as possible and ate them with home made hummus and some raw veggies.
Vegan Flax Cracker Recipe
- 1 cup flax seed
- 1 cup pumpkin seed
- 1 cup sunflower seed
- 1/2 cup water
- 1 tablespoon finely chopped fresh rosemary
- 1/2 teaspoon flaky sea salt plus extra to sprinkle
Preheat your oven to 200C (400F)
Put all the seeds and salt in the food processor and blend until fairly fine. Add the rosemary, pulse, then drizzle water in slowly until it forms a ball - you may not need all of it or you may need a little more.
Cut waxed baking paper to fit an oven tray. Roll your dough out over the tray to about 1/2 inch thick - if you don't have a rolling pin just press it out with your fingers. Sprinkle over a little extra sea salt. Bake in the oven until golden, approximately 10 minutes. Take out and score square or rectangular shapes with a knife. They will harden as they cool, then you can break into small pieces.
