- 1 gluten free pizza base (I use the Freedom brand).
- 50g organic tomato paste
- 4 sundried tomatoes, chopped
- 5 button mushrooms, sliced
- 2 Tonzu organic tofu sausages, sliced
- 1/2 red onion, sliced
- 1 bunch basil, roughly chopped
- 1/2 avocado, diced.
Preheat oven to 230C.
Spread tomato paste over base. Arrange the sundried tomatoes, mushrooms, sausage and onion over top and bake in the oven for 10 minutes. Add basil & bake for another 3-4 minutes. Serve topped with avocado.
