Garlic & Rosemary Fries With Whipped Avocado

Because who ever gets sick of fries! I eat them so often I'm surprised I haven't turned into a potato quite frankly. They're such a quick easy dinner and when you eat them wrapped in cos (romaine) lettuce leaves like I do then you're packing the greens in without even a thought. Commercially grown potatoes are very heavily sprayed so always buy organic - if you're unable to, you're better off buying sweet potatoes.

  • 1.5 kilos organic red skinned potatoes
  • 1 tablespoon chickpea flour
  • 1 tablespoon fresh finely chopped rosemary
  • 3 large garlic cloves, finely chopped
Preheat oven to 200C/400F.
Scrub the potatoes and cut them into lengths. Dry them well and put in a bag with the flour, garlic and rosemary. Toss together well. Lay them out on baking paper and cook for approximately 25 minutes, or until cooked through and crispy.
Whipped Avocado To make this nice and smooth, put the flesh of 1 avocado in the blender or food processor with a pinch of Himalayan or Volcanic salt and some freshly ground black pepper. Optional - add a handful of coriander (cilantro).
