These bliss balls couldn't be easier or more versatile to make. Each time, I make a different version depending on what I have on hand or what I feel like experimenting with. It's all about tasting them along the way to make sure the sweet balance is right for your palate, and the texture which needs to end up at a dough like consistency so you can roll them easily. If you want to make them nut free, exchange the walnuts with sunflower seeds.
- 1 cup dessicated coconut
- 1 cup dates
- 1 cup walnuts
- 1/4 cup vegan chocolate protein powder (I used Super Elixer cacao protein). If you don't use a chocolate flavor you may want to add a little extra cacao
- 1 tablespoon raw cacao powder
- 1/4 cup cacao nibs
Soak the dates in warm water - if you're in a hurry use boiling water, they will be ready in less than a minute this way. Blend the walnuts in a food processor until fine. Add remaining ingredients except cacao nibs and process again until it forms a dough - if ifs too dry, add a little water. Add cacao nibs and pulse once or twice just to mix - you want them to stay whole.
Form into balls, roll in whatever superfoods you have on hand - I used hemp seeds, matcha, a berry greens powder, unhulled sesame seeds, coconut and chia seeds. Refrigerate and enjoy!
