This is an easy protein packed snack that is perfect to eat on its own or throw together a salad for lunch or dinner. I love the crunch, it really satisfies cravings for me = I admit it, I'm a massive potato chip fan, love that salty crunchy goodness! So this is perfect for keeping that craving satisfied in a healthy way.
- 1 cans chickpeas (also known as garbanzo beans) thoroughly drained and rinsed
- 1 tablespoon coconut oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon sea salt
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
Preheat oven to 230 Celcius (450 degrees Fahrenheit). Dry chickpeas between paper towels or in a clean tea towel. Put chickpeas in a bowl and toss them with the coconut oil then season to taste with salt, garlic salt, and cayenne pepper, if using. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy.
