Crispy Baked Tofu with Wild Rice Medley

Even though this recipe looks like it has quite a few ingredients and steps, its actually really quick and easy to make. Tofu is so delicious like this often half of it doesn't even make it to the dish!
RICE
1/3 cup wild black rice
1/3 cup red rice
1/3 cup brown basmati rice
2 1/4 cups water
SAUCE
2 tablespoons low sodium Tamari (soy sauce)
2 tablespoons chopped coriander (cilantro)
1 tablespoon sesame oil
1/2 teaspoon Japanese chilli
1 head broccoli, cut into small florets
1 1/2 tablespoons sweet chilli sauce
TOFU
1 275g block firm organic tofu (7oz)
1/2 teaspoon Himalayan or sea salt
1/2 teaspoon cracked black pepper
2 tablespoons arrowroot flour (can sub for cornflour)
Cook rice with water in a rice cooker, or in a pot for approx 40 minutes until water is absorbed and rice is cooked through.
While rice is cooking, preheat oven to 200C/410F.
Drain the tofu well then cut into pieces 1/2 inch thick. Sprinkle all over with salt and ground black pepper then coat well in the flour.
Transfer to a baking tray lightly sprayed with oil. Bake for 10 minutes, turn over then bake for 5 more minutes.
While the tofu is cooking lighlty steam or stirfry the broccoli.
Mix the broccoli through the rice along with the coriander, sesame oil, Tamari and Japanese chilli. Layer the tofu on top then drizzle sweet chilli sauce over before serving.
