Creamy Raspberry Coconut Cheesecake


I made this Raspberry Coconut Cheesecake for an event at Britomart Health Week yesterday. It is so easy, so quick other than the soaking times which I find easiest to just do the night before so it's all ready to go. This version is a little less sweet than some raw desserts, which is how I prefer it!



  • 1 cup desiccated coconut 
  • 1 cup macadamias, soaked for 2 hours then drained (can use cashews instead)
  • 1 cup almonds 
  • 1 cup pitted dates, soaked in warm water for 5 minutes then drained
  • 1/2 teaspoon Himalayan salt 
  • 1/2 teaspoon ground vanilla (can sub for vanilla extract) 
  • 2 tablespoons melted coconut oil


  • 2 fresh young coconuts (can sub for 2 cups of flaked coconut, just soak in warm water for 2 hours then drain) 
  • 1 1/4 cup cashews, soaked for 2 hours then drained 
  • 1/2 cup coconut yogurt
  • 1/4 cup filtered water
  • 1/4 cup maple syrup 
  • 1 teaspoon ground vanilla (can sub for vanilla extract) 
  • 4 tablespoons fresh lemon juice 
  • 1 cup melted raw virgin coconut oil
  • 2 cups fresh or frozen raspberries 
  • fresh edible flowers to decorate 
  1. Line a 20cm cake tin with plastic wrap 
  2. In a food processor blend the coconut until it becomes a flour. Add everything else and process until it forms a dough. 
  3.  Press dough into cake tin and put in fridge while you make the filling
  4. In a high speed blender, blend everything except coconut oil and raspberries until smooth and creamy. Then drizzle the coconut oil in slowly until fully combined
  5. Pour 3/4 this mixture into the cake tin.
  6.  Add the raspberries to the remaining mixture, blend until smooth then pour over the white mixture
  7. Using a teaspoon, swirl the mixtures together - but only a little bit, or the whole cake will turn completely pink
  8. Set in fridge for 12 hours. After this you can put the edible flowers on and serve, or you can freeze whole or in slices
