When I say sugar free I don't mean hey no refined sugar but full of dates, coconut sugar or some other 'natural' sweetener that still messes your insulin levels ❌ I mean 100% sugar free but still insanely delicious, & especially perfect for those of us with problematic blood sugar. I've been experimenting for years on what works best with my hypoglycaemia and LCHF is the clear winner. Plus it has given me loads more energy, better skin & improved a lot of other health issues so #stokedasbro Who else does LCHF?
1 cup almond butter
1 cup organic cashew pieces, soaked in warm water for 10 minutes
1/2 cup virgin coconut oil, melted
1/4 cup organic raw cacao butter, finely diced
3/4 cup pure collagen (could sub with another type of plain protein for a vegetarian option)
1 teaspoon pure ground vanilla
1 tablespoon powdered stevia - the intensity of stevia varies depending on the brand so start off with a small amount & add to taste. The one I use is a combination of stevia and erythritol called Betta Sweet.
1/2 cup raw cacao nibs
Blend everything together in a food processor for a minute or two except half the cashew pieces & cacao nibs. Add those last & blend for just a few seconds to combine
Line a large bread or cake tin with baking paper, then press the mixture into the tin. Freeze until set then cut into bars
