Choc Chip Cookie Dough Balls

I made these with Natvia Natural sweetener so I could cut down on the amount of coconut nectar I would normally use, without compromising the taste. Still really delicious! 1 cup cashews, soaked for 2 hours then drained 1/2 cup organic raw rolled oats 2 tablespoons coconut nectar (can sub for maple syrup 1 tablespoon Natvia New Zealand 2 teaspoons ground vanilla 1/2 teaspoon cinnamon Pinch of salt 2 tablespoons cacao nibs

In a food processor, blend everything except cacao nibs until it forms a dough. Add the cacao nibs and pulse until just combined. Roll into balls and refrigerate
