Chilled Chai Milk

I bought a kilo of macadamias at one of the local farmers markets recently so I've been making a lot of macadamia milk and adding different spices for a delicious cold creamy drink. I love to have a nice cool glass of this with one of my carob date balls, match made in heaven! You can make this with any nut you like, some will require more soaking than others. Here's a basic reference -

  • Cashews 2 hours
  • Macadamias 2 hours
  • Brazil nuts 3 hours
  • Hazelnuts 12 hours
  • Almonds 12 hours

Soak a handful of macadamias in water for 2 hours. Drain and add to a high speed blender with:

750ml spring water
1 or 2 pitted Medjool dates (I always buy them whole and pit them myself as they tend to be much fresher).
1/2 teaspoon ground vanilla If you want a more plain milk that's all you need! If you want to make chai milk, add the following
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon nutmeg
1/8 teaspoon cayenne (optional) 
Blend on high for 2 minutes. Pour into a nut milk bag over a bowl, squeezing out all the liquid. Pour liquid into a 750ml bottle and refrigerate. You can save the remaining nut fibre (keep refrigerated) and add it to your next batch of bliss balls.
