Carob Date Balls

These are very simple little treats to make and they're great for a treat after dinner or to put in your kids lunch boxes. My 1 year old can't get enough of them! I used pumpkin seeds as they are a great source of iron for us non-meat eaters, and cinnamon which helps to stabilise blood sugar.

1 cup ground almonds (or you can use your leftover nut grounds from making nut milk)
1 cup pumpkin seeds, soaked & drained
1 cup pitted dates, soaked & drained
1/2 cup carob powder
1 teaspoon ground vanilla
1 teaspoon cinnamon

In food processor, first blend dates and pumpkin seeds. When texture is smooth add remaining ingredients and pulse until well combined.
Roll into small balls and refrigerate
