This potato salad is so damn good I could literally eat the whole bowl myself (well maybe not in one go but I'd give it my best shot!) It's the perfect dish to take to BBQ's and dinner parties, no one would ever guess it was vegan. Maybe just tell them afterwards so they don't freak out - "oh my god, there's no animal in this?" I can't eat something vegan it might make me TURN VEGAN!" I'm not even kidding. I remember well before my plant based days when I was taken to a Hare Krishna centre and was told all the food was vegetarian. I refused to eat it the first time I went because I thought it was all weird hippie food! But the joke was on me, because I did try it (very reluctantly) the next time, and it was fucking delicious. Vegan food is just regular FOOD, can someone go back to pre 2013 and tell me that?
First, boil 6 large red skinned potatoes until cooked but still firm - you want them to retain their shape. Plunge them straight into ice water and let them cool properly. Then cut them into small cubes.
MAYONNAISE RECIPE - make this while your potatoes are cooking
You really need to use a stick/immersion blender to get a good result with making mayonnaise. I have tried in the food processor and Vitamix with pretty dismal results!
- 1 cup light olive oil
- 4 tablespoons aquafaba (chickpea brine)
- ! small clove garlic
- 1/2 teaspoon mustard
- 1/4 teaspoon white pepper
- Juice of 1 lemon
- Salt to taste
- 1 bunch flat leaf parsley, finely diced
- 6 dill pickles, finely diced
- 2 tablespoons finely diced fresh rosemary - optional
In the stick blender container, put all the ingredients except the oil and blend them together until smooth and frothy. Start adding the oil really slowly, drizzling it in while you keep the blender going the whole time. It's important to do this slowly or it can split then instead of a beautifully thick creamy mayo you'll end up with a liquidy mess. Once it gets super thick stop pouring the oil in, as that can cause it to split also. Stir through the parsley, pickles and rosemary if using. Gently mix through potatoes and serve, or refrigerate.
