I made this with Norbu, a natural sweetener made from Monk fruit. This is a deliciously light dessert that is so healthy you can have it for breakfast or put it in small jars and take to work for a snack. I really like using Norbu because it is a great healthy option for naturally sweetening baking or drinks, without compromising on taste.
2 tablespoons chia seeds
1 cup almond or cashew milk
1 1/2 teaspoons Norbu sweetener
1 teaspoon pure vanilla
1/2 cup blueberries1/2 cup raspberries Shake together the chia seeds, milk, Norbu and vanilla in a jar. Shake a couple more times to make sure the seeds don't settle at the bottom then let it set - this will take about 20 minutes.
Layer with the berries in a glass and serve.
