An Apple a Day

Apples aren't fashionable like goji berries or quinoa but they are and always will be one of my favorite fruits. They're such a great snack, especially when you're in a rush or away from home - a must for kids lunchboxes. Why? Not only are they sweet crunchy and delicious, but they don't have to be refrigerated, they don't bruise easily, and you don't have to peel them.  To me, they're the most convenient fast food you can get. I keep a few in the car pretty much all the time for emergency food (you know, those 'break glass in case of hunger' situations which seem to happen to me at least once a day!). What I find really disappointing though, is when you're really looking forward to that beautiful crunch then you bite into it and its all soft and floury - a common problem seeing as how apples are only in season for 2-3 months but are available in stores all year round. But the Yummy apple brand have ensured you don't have that problem, as they are cool stored as soon as they have been picked which means they stay ultra fresh and crisp.They dropped off a big box of their Royal Galas, NZ Rose, Lemonades and Mariris and every single apple has been perfectly crunchy. My 2 year old loves the lemonade apple (literally tastes like its namesake!) and my favorite is the Mariri which is a slightly tart red apple descended from the classic Braeburn. So why eat apples, other than just because they're delicious? Well there's about 100 reasons but I'll keep it simple and stick to 7. IMG_4141

  1. Each average sized apple has about 4 grams of both insoluble and soluble fibre. which keeps you full and satisfied - great to keep the weight down.
  2. One of the types of fibre it contains is called Pectin which helps to prevent cholesterol building up in the lining of blood vessels.
  3. The fibre also helps control insulin levels by releasing sugar slowly into the bloodstream.
  4. Red apples contain an antioxidant called quercetin which can help boost your immune system, especially when you're stressed.
  5. Apples are high in Vitamin C which is essential for a strong immune system.
  6. They also provide vitamin A which helps resist infection and scavenge free radicals that cause inflammation.
  7. They are a good source of B-complex vitamins, which support metabolism and other vital functions inside the body.
Apples are incredibly versatile, I love using them in a huge variety of dishes both raw and cooked. Here are two of my favorite recipes IMG_1126 Apple Pie Smoothie 
  • 1 large apple, cut into pieces with core removed
  • 1 frozen banana
  • Juice of 1/2 small lemon
  • Small handful of cashews
  • 2 pitted Medjool dates
  • 1 cup almond milk
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla
Blend all together until smooth. Pour into jar.  Top layer – 6 large strawberries 1 pitted Medjool date Blend together and pour over top. sauer. Ruby Red Slaw with Tangy Lemon Dressing 
  • 1/4 red cabbage
  • 1 large carrot
  • 1 large red apple (any crisp crunchy apple will work)
  • 1 medium sized beet
This is easiest in a food processor - use the shredding blade for the cabbage and a grating blade for everything else. But if you don't have one it's still easy to make, finely slice the cabbage and grate the carrot apple and beet. You can toss the dressing through or serve it on the side. Dressing:
  • 1/3 cup cashews
  • 3 tablespoons fresh squeezed lemon juice
  • 1 tablespoon pure maple syrup
  • 1 tablespoon Tamari (can sub for Shoyu or regular soy sauce)
  • 1 clove garlic
  • 1 teaspoon mustard
  • 2 tablespoons water
Blend everything together until smooth.
